Pasta Salad

Serves 16


16 ounces rotini pasta

3 cups marinated artichoke hearts (diced)

1 cup reserved liquid from jarred marinated artichoke hearts

2 cups roasted red and/or yellow peppers (diced)

2 cups diced pepperoni

½ cup crumbled feta cheese

Salt and pepper to taste

extra virgin olive oil (to re-moisten pasta, if necessary)



Cook pasta according to instructions on package and drain. To cool pasta, rinse under cold running water; drain.  In a large bowl, toss pasta with reserved marinade, artichoke hearts, roasted peppers, pepperoni and feta cheese. Add salt and pepper to taste. Chill for 4 hours or overnight.


Just before serving; drizzle with extra virgin olive oil and toss, this will re-moisten the pasta and give it a glistening appearance.

For more intense flavor, prepare a day in advance. This will allow the ingredients plenty of time to absorb all the flavor of the marinade.
